Long before cane sugar was available, folks in northern climates sweetened their food and drink with honey. It is still a wonderful way to enjoy the unique flavour of your favourite honey.
5 tips for cooking with honey
1. Different types of honey have different flavours. Strong dark honey may change the flavour of your favourite recipes alot. Lighter honey tends to have less impact on flavour.
2. If you add honey, subtract moisture. A good rule of thumb is to reduce other liquids in your recipe by 1/4 cup for every cup of honey that you add.
3. One cup of honey = one cup of sugar. This rules applies for the amount of sweetness you would expect
4. Honey has more acid than sugar. It can sometimes reduce the amount a baked good will rise, so for every cup of honey, increase baking soda to help neutralize acid and increase the amount your baked good rises.
5. Reduce heat to prevent overbrowning. Honey cooks faster and at lower temperature than sugar. For baked goods you should reduce the temperature by 25 degrees and watch closely for browning.
